Reese's Pieces Cupcakes
This is a kids created recipe. A vanilla cupcake stuffed with a Reese's miniatures cup, topped with a light whipped cream frosting, and decorated with Reese's M&M's. Turns out kids make great chefs!
Ingredients
3 cups all-purpose flour
2 1/2 teaspoons baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
2 large eggs
2 cups milk
1 teaspoon vanilla extract
24 Reese's miniatures
Whipped Cream Frosting
2 cups powdered sugar
2 cups heavy whipping cream
1 teaspoon vanilla extract
2-3 drops orange food coloring
Topping
Reese's M&M's
Preparation
Preheat the oven to 350 degrees. Place cupcake holders in muffin pans. Spray with non-stick baking spray.
Sift the flour, baking powder, and salt together in a medium bowl.
Using the paddle attachment on a stand mixer or twin beaters, cream the butter. Gradually add the sugar, creaming until light and fluffy.
Add the eggs one at a time, and beat well after each addition.
In a small bowl, combine the milk and vanilla.
To the butter mixture, add ¼ of the flour mixture and mix well. Add ¼ quarter of the milk mixture and mix well. Continue alternating the flour and milk mixture, beating after each addition until smooth.
Pour batter in muffin tins half ways up. Add one Reese's miniature in the center of each muffin tin pressing down gently. Fill the muffin tins with additional batter equaling ¾ ways up. Bake for 20 minutes, or until toothpick inserted in the center comes out dry. Remove from oven and let cupcakes cool completely.
Using the paddle attachment on a stand mixer or twin beaters, beat the heavy whipping cream, powdered sugar, and 1 teaspoon vanilla on high speed until whipped cream forms. Add food coloring and mix until color forms.
Top cupcakes with whipped cream frosting and decorate with Reese's pieces M&M's.
